Bikini Recipe

Yields 10 servings

Ingredients for the Clementine Syrup (yields 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar

Ingredients for the Premix (makes 850ml, serving 10)

400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch

Instructions

For the Citrus Syrup: Combine all the components in a pan, heat until it reaches a gentle boil, agitating to dissolve. Then, remove from the heat allowing it to reach room temperature completely. Decant into an sterilised bottle, seal keeping it in the fridge, it will last for up to four weeks.

To make Premix: Pour every spirits and syrup in a large bottle, leave to sit for 60 minutes, then filter it best through a fine cloth, making it completely strained.

When ready to serve: Pour 85ml from the cocktail base into a cocktail shaker packed with ice, gently stirring carefully for about 60 seconds until cold. Strain into a cold coupe glass or a similar vessel, garnish with some cranberries and complete it with a brief mist of mandarin oil above the glass.
