Holiday Bite-Sized Treats: How to Utilize Christmas Leftovers into New Year’s Eve Canapes

Party snacks needn't be elaborate, so New Year's presents a great opportunity to clear the decks. The key rule is to stick to items to just one bite—guests don't want to manoeuvre a fork. People are looking for a comforting taste of hearty fare with a decadent twist.
If you have a bit of cured fish left, place it on mini pancakes and crown it with lumpfish caviar. Mini fishcakes are also just the ticket: If you have leftover smoked haddock or hot smoked salmon, fold it through creamy potatoes, blend with fresh herbs, lemon, and caramelized onions, then coat in Japanese breadcrumbs and fry until golden.
You could also get creative with croquetas. Prepare the white sauce up to days ahead, then use leftover ham, poultry, or foraged fungi for the interior. Blitz old bread into crumbs to cover them, then cook until crisp. Savoury pastry mixtures are another natural home for those breadcrumbs, or use them as a jacket for chicken pieces. Seasoning-wise, all you need a bit of lemon zest and thyme, and they'll sing so much more. As an aside, buttery pastries make excellent coatings, too.
One favourite thing at this time of year is a post-holiday sandwich, and that doesn't have to stop after Boxing Day. Get some ham and turkey in an sealed tub and store in the freezer. While you're at it, set aside some berry relish and sweet glaze in the refrigerator. When needed, defrost the meat, then place it in a preheated oven with the reserved glaze for a brief period. Cool and cut into thin pieces, then lay on top of some artisan bread and assemble sandwiches with lots of cranberry sauce. Cut into bite-sized pieces for a surefire hit.
Remaining poultry, meanwhile, could be transformed into a zingy salad. There’s always a bit of turkey leg left over, and it's perfect for something full of flavour. Pull the meat, then crisp it slowly in a pan, and toss with remaining sauce loosened with lime juice, a dash of soy sauce and a little chilli oil. Garnish with chopped herbs and some green onions, and present in small lettuce cups.
Revamping Leftover Vegetables
Vegetables, meanwhile, can be dressed up and ready to party with a big batch of bubble and squeak. Combine all your remaining vegetables with herbs, then add salt and pepper and incorporate a binding agent. Stamp out portions to about the size of small rounds, then keep in the icebox. Reheat in a preheated oven for a few minutes and finish with whatever you like—perhaps roast beef and grated horseradish. A word to the wise, though: set some aside for a late breakfast the next day.
